The traditional art of pizzaiuolo, handed down for generations in Napoli and Campania region, won the coveted world heritage honour today. The decision was approved by the UN cultural body’s world heritage committee, which met on the South Korean island of Jeju, after more than 2 millions people signed the petition for the application.

The intangible heritage list was created in 2003 by Unesco, mainly to raise awareness and to help countries to protect their traditions and ancestral savoir-faire.

Neapolitan pizza has been a “specialità tradizionale garantita” (S.T.G., a guaranteed traditional specialty) since 2010. The European Union recognized that a true Neapolitan pizza can only be produced in a certain manner, in a certain area. As for the manner, this means with a dough as supple and simple as that of bread and only a handful of allowed toppings, like Sammarzano tomatoes, olive oil, basil and mozzarella (di bufala) or fiordilatte (cow mozzarella), for Margherita, or sammarzano, garlic, oregano and olive oil for the Marinara. The area is, of course, Naples. 

Italy’s minister for agriculture, food and forestry, Maurizio Martina, tweeted “Victory!”, saying this was “Another step towards the protection of Italy’s food and wine heritage.” As an Italian citizen, I am extremely proud that such an art is now "protected" and celebrated as one of humanity's treasures. What I love about pizza is that it is such a versatile dish that can find a place on every country's table. Of course, the real pizza is that of Naples, but every country and pizza maker has his own tricks to add that little magic: Incredible white pizza with ricotta, zucchini flowers and white truffle (OK, this one is still 100% italian ;) ), pizza with sardinas de Cantabria or with Lomo Iberico, pizza with kalamata olives and greek onions, etc. 

To me, pizza means conviviality, by its essence.

Pizza Margherita

It is meant to be shared, eaten with hands, together with family or friends. I am not a huge soccer fan, but there are few situations I enjoy more, than eating pizza with my friends in front of a match - or a well-deserved slice of pizza after a 2-days marathon of a Startup Weekend ;)

Since I have moved to Paris 7 years ago, I have eaten my way through Parisian Pizzerias... And there are actually some good very good pizzerie in Paris :)
